Goldfinch Brasserie Opens at Waldorf Astoria Amsterdam
AMSTERDAM - Waldorf Astoria Amsterdam is delighted to introduce Goldfinch Brasserie, adjacent to the hotel's private garden. Due to the success of Librije's Zusje Amsterdam, which received two Michelin stars just seven months after its opening, a second restaurant was desired to meet the guests' culinary needs.
The extensive menu, created by Executive Chef Sidney Schutte and his talented kitchen team, combines new dishes such as Duck Pie (White Sesame, minced Duck, Hoisin, Orange, Potato Puree, Spring Onion) and Crispy Suckling Pork (Lacquered with Clove Honey, Sauerkraut & Potato Puree) with classics and favorites from the international cuisine, however with a Goldfinch signature like Smoked Salmon Rosti (Potato Rosti covered with Smoked Salmon, Sour Cream, Dille, Capers & Chive) and Wagyu Beef Burger (Smoked Bacon, Gouda Cheese, Romaine Lettuce, Pickles, Tomato & Red Onion Relish on a Sesame Bun).
The wine list, just as comprehensive, includes exceptional wines by the glass and bottle. Guests and visitors at Waldorf Astoria Amsterdam can enjoy a delicious meal in tranquil surroundings, whether it be a light lunch, business meeting, a three-course dinner or a quick meal before the opera or theatre. Open daily from 12.00 until 14.30 and from 17.30 until 22.30, Goldfinch Brasserie caters to the diverse needs of Waldorf Astoria Amsterdam's guests.

The name Goldfinch Brasserie is inspired by the painting of the bird, Goldfinch, which was made famous by the paintings of the 17th century Dutch painter Carel Fabritius. In the Golden Age, the bird was a common companion in the large private gardens of the city palaces, such as the garden of Waldorf Astoria Amsterdam. In the 17th and 18th century, the canal houses were inhabited by merchants and wealthy families, including the families Hooft, Backer, Kemp, Huygens, Sautijn, De Wildt and Geelvinck (Goldfinch). Some of the suites and meeting rooms in Waldorf Astoria Amsterdam are named after the illustrious former residents, and now the Goldfinch Brasserie is as well.
