Jason Atherton Opens The Betterment at The Biltmore Mayfair, LXR Hotels & Resorts
Michelin-starred chef and restaurateur returns to Grosvenor Square with the launch of his bar & restaurant at Europe’s first LXR Hotels & Resorts opening
LONDON - Chef and restaurateur Jason Atherton of The Social Company and LXR Hotels & Resorts, Hilton's (NYSE: HLT) collection of luxury hotels, today announces the opening of The Betterment at The Biltmore Mayfair, LXR Hotels & Resorts. The launch is a grand return to the area for Atherton, who rose to prominence launching Maze on Grosvenor Square in 2005 and marks the opening of Europe’s first hotel within the LXR Hotels & Resorts collection.
The head Chef is Paul Walsh, who launched and led Jason Atherton’s City Social for five years and achieved the restaurant’s Michelin-starred status within seven months of its opening.
The Betterment’s seasonally driven menu features beautifully presented dishes of wood-fired fish and meats, fresh seafood, signature salads and inventive side dishes. At the heart of the restaurant is a dramatic and rustic open grill, partially hidden behind frosted glass but exposed in a way that brings the kitchen into the dining room and adds a sense of theatre to the space. Dishes are roasted over the embers and designed to share, including the likes of roast chicken, trompettes with Albufera sauce (£40) and native lobster with a white port bisque (£20 half / £40 whole). A selection of mains offer individual dishes of ox cheek tortellini with horseradish velouté (£26) and line-caught sea bass, Fowey oyster and cucumber (£32). Sides have been designed to impress, with dishes allowing guests to journey across the world, ranging from confit Basque peppers (£12), beef dripping chips with truffle and mushroom ketchup (£12) and new forest wild mushrooms with smoked egg yolk (£12).
Overseen by Head Sommelier Stefan Kobald, the wine list comprises over 800 bins celebrating the best wine makers from around the world whilst championing new producers and small wine makers. With classic French wines at the core of the list, the curated selection sees the old-world brush shoulders with the new and features exciting blends from Austria, Germany, America and Italy. Bottles start at £35, with 70 available by the glass from £8.50.
A fabulously indulgent breakfast menu is available for hotel guests and dining visitors alike with dishes such as Scottish lobster scrambled eggs, lobster bisque and truffle (£18), a signature The Betterment full English breakfast (£25), or, for those wanting a lighter option, chia seed, yogurt, strawberry and toasted almonds (£12).
Meanwhile, an exquisitely illustrated children’s menu takes little ones on a journey through the storybook-inspired tale of “Rafe’s Trip to London,” featuring appearances from Atherton and Walsh, before they make their choice from child-friendly dishes such as pasta with Bolognese, tomato and basil (£8) and chicken schnitzel (£8). For dessert, children will be amazed by a sundae of milk chocolate and orange ice cream, butterscotch sauce, chocolate brownie, crushed meringue, whipped cream and a chocolate flake (£8)

Alongside The Betterment, its two Private Dining Rooms, in-room service and the hotel’s extensive event spaces, Jason Atherton and his team also oversee the food and beverage for the hotel’s other offerings, The Terrace, The Tea Lounge and The Pine Bar.
The Terrace provides guests with a heated outdoor sanctuary to be enjoyed all year-round, whilst The Tea Lounge offers a unique Afternoon Tea (£65pp), showcasing premium British produce alongside infusions from The Rare Tea Company. “Savouries” include finger sandwiches filled with the likes of Wiltshire truffle, Brixham crab and Hereford beef, and “sweet delicacies” play on popular treats from around the country such as a ginger parkin made with hazelnut cream, salted caramel and milk chocolate and a “Silent Pool” gin and tonic cake with lime, orange and white chocolate.
The Pine Bar continues to take guests on a trip around the United Kingdom with a cocktail menu featuring creations such as the Penny Lane, a dedication to Liverpool made with Botanist gin, Isake classic, Mirabelle eau de vie and apricot and The Great Pagoda, inspired by London’s Kew Gardens and blending Grey Goose orange vodka, jasmine vinegar, cider Amontillando sherry and Lacto tomato water. There is also a strong whiskey focus, with a trolley showcasing an extensive offering from Scotland to Japan.
