The Durban influence is evident as you enter the Restaurant, where the modern reception desk is modelled on a traditional beer pot, backed by a glass wall featuring typical Indian colours. The pillar behind the desk reflects wooden bracelets, continuing the theme that celebrates the fusion of cultures that is Durban.
"A lot of thought went into the design of Vasco's" says Markus Fritz, General Manager of Hilton Durban "and I believe that we achieved our objective of creating a space that echoes the collective influence of various cultures in a contemporary, authentic and chic manner."
The careful design allows for a light airy feel during the day which is complemented by the ingenious use of drop lighting that maintains a feeling of cosy warmth in the evenings. You are drawn through the restaurant to the covered outside patio, a perfect spot for large family gatherings or celebrations with friends.
Back inside, the Tandoori oven takes centre-stage at the impressive inter-active Vasco's buffet counter. The visual effect is accompanied by the impact of the aroma of fragrant spices that are used in creating the culinary delights that make deciding what your next course will be so difficult.
The delectable buffet-style offerings are the best samplings of contemporary South African and International cuisine. Vasco's interactive live-cooking station and lavish spreads vary from an assortment of seafood, grills, curries, pasta and pastries to dishes prepared "while you watch" in the tandoori oven.

"We named the restaurant after Vasco da Gama the first European sea-faring explorer to sail into Durban bay on Christmas Eve 520 years ago," says Fritz "he was instrumental in introducing the spices of the east into Europe, without which many of today's meals would be colourless and lacking in taste and flavour."
