Hilton Surfers Paradise Executive Chef Serves up Sustainability with a Side of Success
SURFERS PARADISE, Australia - Catch Restaurant Executive Chef Kathy Tindall is challenging the dining scene on the Gold Coast, offering an innovative, seasonal and sustainably sourced menu at Hilton Surfers Paradise’s signature restaurant.
As one of the only female Executive Chefs on the Gold Coast and an industry veteran with over 20 years’ experience in the hospitality industry, Ms. Tindall brings a wealth of knowledge and a fresh perspective to Catch Restaurant.
Having worked in the kitchens of Hilton hotels for more than 13 years, Ms. Tindall is no stranger to hotel dining. During her career, she has worked all over the world and in some of Australia’s most renowned dining venues alongside the best in the business, including famed Chef and Restaurateur Luke Mangan.
Ms. Tindall believes her extensive career to date effectively prepared her with the necessary skills and knowledge to successfully lead the team whilst launching Catch Restaurant.
“There was the excitement of a new challenge, combined with high expectations and a massive vision,” said Kathy Tindall, executive chef, Hilton Surfers Paradise. “The opportunity to open Catch Restaurant really highlighted the importance of ensuring front-of-house, service, delivery and all the details of the dining experience all come together to make Catch Restaurant exceptional.”
Acknowledging that any successful restaurant environment requires a highly functioning team, Ms. Tindall credits the mentoring program and ongoing support provided by Hilton Hotels & Resorts for facilitating such a conducive team environment.
“Hilton fosters their team members and provides support and direction on how to not only be a better person, but how to be a better leader. It is all encompassing, it’s about working together to deliver the best results whilst maintaining a healthy work-life balance,” said Ms. Tindall.
Ms. Tindall says there was an element of logic that went into developing Catch Restaurant with a predominant seafood offering, given its seaside location. However, the creation also provided Ms. Tindall the opportunity to showcase her passions of fusing sustainably sourced seafood and Asian influences.
Inspired by her time working in Singapore at Luke Mangan’s flagship Salt Grill and Sky Bar, Ms. Tindall marvels at the complexity and versatility of Asian flavours, as well as its ability to transform a dish.
“So much of my history with cooking refers back to Asian influences,” said Ms. Tindall. “The flavours are easily infused with other foods, allowing me to be really inventive and creative.”
Together with fresh, sustainably sourced seafood, the combination is proving to be successful for the beachside venue.
Ms. Tindall says her desire to have sustainable seafood on the menu at Catch Restaurant is a vision that also supports one of Hilton’s global Travel with Purpose commitments, which is to only serve Marine Stewardship Council (MSC) certified seafood by the year 2022.
“Our diners also benefit from eating fresh, locally sourced produce and knowing they are doing the right thing by the seafood industry and supporting suppliers that are operating ethically and sustainably,” said Ms. Tindall.
