Hilton Diagonal Mar Barcelona Unveils AÜRT and MA’I, Its New Gastronomic Project in Collaboration with Artur Martínez
The Catalonian chef puts his faith in the hotel as he embarks on a new culinary venture, and he will be cooking in front of diners seated in the newly renovated lobby
BARCELONA, Spain - Hilton Diagonal Mar Barcelona is opening AÜRT and MA’I, a new restaurant concept led by Catalonian chef Artur Martínez. Two dining experiences will share the same space, each possessing their own character and atmosphere. The gastronomic offering is part of the final phase of the hotel renovations and is situated in the heart of the establishment.
AÜRT represents Artur Martínez’s gastronomic journey, a profound encounter of proximity and simplicity and the elevation of the everyday, offering a fresh perspective on foods, respecting their seasonality and freshness. Artur’s gastronomic philosophy is a combination of precision and the sensory art of simplicity, shunning all that is unnecessary and incorporating warmth, colour, aesthetic detail, and texture. It’s a culinary contrast that works. As Artur himself succinctly describes, “Japanese essence with Mediterranean heart.”
Another quirk of this project is that both the rehearsal and the main event take place in the hotel lobby. There’s a genuine honesty in every dish that’s meticulously prepared in front of guests in this exclusive setting limited to just 15 diners, who will be divided into two wide and comfortable tables. The kitchen is in full view, allowing for direct interaction between chef and diner.
Their tasting menu is €95 a head and includes creations such as leeks with ginger mayonnaise, cured mackerel con migas, or calf’s foot with Perigourdine monkfish. There is a total of 16 dishes and a cellar containing 180 varieties of wines that are natural, elegant, and expertly produced and sourced.
AÜRT shares a space with MA’I, a more informal setting that is also managed by Martínez, and it is a tribute to drinking, which hopes to reclaim its historic place within the grandest hotels whilst rethinking its conventions with a particular gastronomic vision in mind. This space, split into three distinct areas, is open all day and dedicated to infusions — a range of teas and coffees sourced from artisanal plantations; fermentations — vermouths, beers, and a carefully selected wine list; and distillation — high-quality, well-explained spirits inspired by classic cocktails.
As well as drinks, MA’I serves food centred on local produce, traditional Catalonian cooking, and international classics with specials made from local ingredients, the majority being sourced from small producers. The menu includes several different snacks, artisanal pastries and breads, tapas, and charcuterie. Tasting plates and stews are offered every day in line with the season, the quality of the ingredients, and the chefs’ inspirations.
For its décor, Hilton Diagonal Mar Barcelona has worked with well-known London firm The Hickson Design, the same company that planned the redesign of its bedrooms and event and meeting spaces. Following the same themes as those in the hotel, the studio has taken inspiration from Mediterranean themes and icons who define the city, basing their palette, materials, and textures on natural elements, including water, light, and the earth.
“As a key objective in our repositioning, we set two challenges for ourselves: redefining the hotel, and rewriting the rules of the sector in light of market trends, consumer needs, and the profiles of current clients. One of the greatest challenges was updating our culinary offering within a gastronomic landscape that was already of the highest quality to create something that was authentic, unique, and true to Barcelona. Artur Martínez was an obvious choice in ensuring that these elements really come alive in two concepts that share the same space,” explains Joachim Hartl, General Area Manager of Hilton on the Iberian Peninsula.

About Artur Martínez
Raised in the heart of a local bar established by his grandparents in Terrassa in 1952, Artur Martínez trained as a chef in the Joviat School in Manresa, spending short periods in various prestigious restaurants. Amongst other milestones during these years, his culinary maturity led him to victory in the Young Chefs of Catalonia competition. In 2002, together with his family, he transformed the old family business into a small gastronomic restaurant: Capritx. Once a dream facing many setbacks, the restaurant obtained great recognition, demonstrated by the Michelin star it received in 2010. His greatest achievement, however, was gaining the respect of other professionals for his vision and dedication, and finding his own gastronomic personality, accomplished mainly by the austerity of his resources, his creativity, and the perseverance of the Martínez family.
During this stage, the chef became deeply involved in recovering his region’s gastronomic heritage. He also knew how to identify and nurture the talented young chefs who shared his vision. This is demonstrated in the fact that four winners of the Catalonia Championship emerged from his small kitchen. In August 2017, at the height of his professional career, he decided to close Capritx to prepare for a conceptual transition, and to establish himself in Barcelona.
Martínez was adamant that he did not want to establish himself in the city centre, and Hilton Diagonal Bar Barcelona offers the perfect location to carry out his new project in Barcelona. This restaurant is inspired by, and uses as its foundation, the chef’s origins, and represents a natural evolution towards a more personal and gastronomic concept, leaving behind external limitations to develop its kitchen in total freedom.
