Hilton Darwin Dishes Up Local And Sustainable Seafood
DARWIN, Northern Territory - With some of the best seafood in Australia found in the Northern Territory, Hilton Darwin is looking to its own waters to provide guests with the freshest catch across all of its menus. In collaboration with Support NT Caught, an initiative that promotes Northern Territory seafood established by the Northern Territory Seafood Council, Hilton Darwin is leading the way when it comes to endorsing fresh, local and sustainable seafood.
From baby snapper, black jewfish, baby rock cod and barramundi to mud crabs and banana prawns, the Northern Territory offers some of the country’s best seafood. In an effort to showcase this incredible produce, Hilton Darwin Executive Chef Akash Srivastava has introduced a Northern Territory seafood display in the hotel’s Mitchell’s Grill where guests are able to select their catch and have it cooked to their liking.
“We are so fortunate in Darwin with all of the great seafood at our disposal,” said Srivastava. “I really wanted to offer our guests at Mitchell’s Grill the chance to experience the incredible and unique variety of it and our seafood display really does wonders to showcase it. We sell our seafood at market prices with all sides and accompaniments included. The fact that they can have it cooked just the way they like it is just another way we ensure they have the very best NT seafood experience.”
Chilli mud crab is just one of Srivastava’s specialties at Mitchell’s Grill. Having trained in India before moving on to work at various hotel’s in Dubai and Oman, Srivastava’s food reflects his Far Eastern heritage while incorporating lighter Southeast Asian flavours, that are typical of Darwin’s food culture.

Of course it’s not only seafood that takes centre stage at Hilton Darwin. Srivastava also utilises local produce in dishes such as butter chicken, Thai beef salad and grilled kangaroo fillet with crushed potatoes, confit cherry tomatoes, wild mushrooms and veal jus. From dining in Mitchell’s Grill for dinner or lunch to snacking poolside, Hilton Darwin ensures great local food across all of its menus.
Hilton Darwin has recently completed a $10 million renovation that saw the all rooms and bathrooms, lobby, pool area and Executive Lounge refreshed. Centrally located on Mitchell St overlooking the Esplanade, Hilton Darwin is Darwin’s only five star hotel. The hotel is walking distance of all major corporations and government offices, Darwin Convention Centre, shopping and dining precincts and is a 15 minute drive from Darwin International Airport.
