Nicholini’s presents summer berries and porcini menu
HONG KONG, China - The gifted terrain in Southern Europe has been known as the cradle of some of the world's most coveted food ingredients. Two ingredients of distinctive characters - wild berries and porcini from Italy and Spain - come together in A Symphony of Italian Summer at Nicholini's, as chef Luca de Berardinis makes adventurous yet skilled arrangements to turn this unexpected pairing into an array of dazzling treats.
Nicholini's scouts porcini in the prime season from Tuscany to be the backbone of the menu. Limited in supply, the mushroom boasts creamy, nutty, intensely aromatic properties which account for the outstanding flavours in the dishes. The other half of the highlight, perfectly ripe Italian and Spanish wild berries has been a staple in summer desserts. Under chef Luca's creative hands, they also contribute to the development of taste and visual impact in the savoury dishes, resulting in photogenic sensations evocative of episodes at a summer garden.
The dinner features buffalo ricotta ravioli with porcini mushrooms, snapdragon and absolute saffron storck. Stuffed inside the al dente pasta is creamy cheese filling steep in notes of earthy fungus - it is easy to understand why this recipe is a longstanding favorite for Italians. Gilded saffron broth is poured around the ravioli during service to enhance the sense of extravagance, while bright snapdragon flowers further refine the composition.
Equally satisfying is marinated amberjack with blackberry salad, eggplant and sautéed porcini. A marinade of lemon, salt and oyster water refreshes the fish Carpaccio echoed by the bright overtones of the blackberry salad. Beautifully cooked mushrooms add a new dimension to the raw ingredients. Over to the entrée, chef Luca employs superior lamb from Lozére, France to prepare lamb rack glazed with honey, fresh baby salad with grilled porcini and wild berries. The lamb's texture is nothing short of spectacular. Its natural sweetness is intensified by the honey glazing, well complemented with zesty berries and porcini quickly grilled on high heat to seal the relish.
