il Cielo Launches Interactive Omakase Dining With Chef de Cuisine Yohhei Sasaki
Hilton Singapore’s rooftop Italian restaurant invites diners to an Omakase experience that incorporates interactive conversations with the chef and fresh, quality ingredients
SINGAPORE - Come August, fans of il Cielo Rooftop Italian Dining will be able to indulge in an omakase menu of fresh, seasonal ingredients, personally curated by resident Chef de Cuisine, Yohhei Sasaki. A Japanese phrase meaning, “I will leave it up to you,” omakase is a meal consisting of dishes selected by the chef. Well-versed in both Italian and Japanese cuisine and techniques, Chef Sasaki spent years training in some of the top Michelin-starred restaurants in Tuscany and Lombardia, and refining his skills in some of the most traditional, family-run Japanese eateries in Tokyo. He is particularly passionate about finding the perfect balance between both cultures and is masterful at combining his own distinctive Japanese flair with classic Italian fare.
“My version of omakase involves an infusion of Japanese cooking techniques and ingredients into Italian cuisine. It is a collaboration of the two cultures, both famous for their respective cuisines,” said Sasaki. “For example, methods used in traditional Japanese sushi restaurants are incorporated into how we prepare carpaccio. Ingredients are kept simple and each dish uses fresh, seasonal items including Japanese ayu fish and Hokkaido uni as well as zucchini, scampi and octopus from Italy. A lot of time and preparation goes into ensuring that we bring each guest something that is original and creative.”
The launch of omakase at il Cielo was inspired by a desire to share the love for quality, sustainable ingredients as well as to facilitate dialogue around food and conscious dining. Guests are encouraged to interact with Chef Sasaki and ask questions about anything and everything – what goes into their food, what makes the ingredients work, or even what kind of wine pairs best with a particular dish.
Upon confirming their reservation, guests are invited to collaborate with Chef Sasaki through suggesting a particular ingredient, drink, dish, or even a special memory that Chef Sasaki can plan the menu around. This process of learning and discovery elevates the entire experience, making it deeply personal, intimate and tailored to each individual's preferences.
Using only the freshest seasonal produce, omakase dining at il Cielo seeks to bring awareness to the variety of new flavours and ingredients available and broaden perspectives of what a restaurant dining experience can be.
